A dear friend sent me this little gem because she remembered that I love Guinness....in fact, once upon a time I used to be the President of the Guinness Appreciation Society in Canberra - my name appears at the top of a plaque on the wall of the Irish pub PJ O'Reilly's (if it's still there after all these years) as a one of the first members of their 100 Pint Club.

Ingredients:
Pour Guinness in large saucepan, add butter stir on low heat till butter is melted in. Remove from heat. Whisk in cocoa and sugar. Dissolve sugar.
In a separate bowl beat sour cream with eggs and vanilla then pour into the mix. Beat in the flour (and bicarb if your not using the SR).
Bake at 180°C for approx 45 min.
Icing:
Slather on the icing once the cake has completely cooled.

- 400 g brown sugar
- 250ml Guinness
- 250g butter
- 75 cocoa ( l put 100)
- 140ml sour cream
- 2 eggs
- 1 tbsp vanilla
- 275g plain flour with 2 1/2 tsp bicarb
- OR 275g Self-raising flour

- 300g cream cheese
- 150 sifted icing sugar ( not icing mixture)
- 125ml thickened cream
- Lemon zest ( I also put the juice in)
- Beat until smooth.
Slather on the icing once the cake has completely cooled.
