Faki (Greek Lentil Soup)

This is one of Adam's recipes. His father, may he rest in peace, used to make this for the family when Adam was a wee tacker. He never got the recipe off his father before he passed, so after years of trial and error, he finally managed to recreate it just like his dad use to make.


Ingredients:
  • 300g brown lentils
  • 1 large onion
  • 3-4 cloves garlic
  • 1 large carrot
  • 1-2 sticks celery
  • Olive oil
  • 1 tbsp salt
  • 1/4 cup brown malt vinegar
  • Bay leaf
Putting it all together: Chop and the vegetables & lightly brown with the bay leaf in a medium-sized soup pot.
Fill the pot with water, add the lentils, salt and vinegar.

Bring to the boil and simmer until the lentils are soft (about 40-60 min at least).

Serve to your husband with extra salt & vinegar to taste.
