Avocado and prosciutto salsa on cantaloupe bites

My friends held an "Iron Chef" inspired dinner party on the weekend and the food was simply incredible! The 'mystery ingredient' was avocado and this was by far my favourite dish from the evening. To give you an indication of how good it was, I hate the taste of cantaloupe but I went back for fourths!

Ingredients:
  • 100g prosciutto, chopped
  • 1 1/2 ripe avocados, finely diced
  • 2 heaped tbs of guava paste (or quince), fine cubes
  • 1/2 tsp diced ancho chilli, very very fine (alternately, maybe no-oil sun-dried tomato dusted with paprika)
  • Soft goats cheese, for spreading
  • Cantaloupe

Putting it all together:

Fry prosciutto in oil until crisp. Mix thoroughly with avocado, guava paste, and chili.

Cut cantaloupe into 2cm x 3cm x 6mm pieces. Spread with 1 to 1 1/2 tsp of goats cheese and top with the avocado mix.

Sprinkle with black salt and serve alongside a random Asian vegetable
