Golden Syrup Dumplings

I caught up with the family the other week, they were all camping up at a place called Long Plain in the Kosciuszko National Park. We only went up for the day, but they put on a magnificent feast of campfire roast lamb, pork, chicken and for dessert, Golden Syrup Dumplings - an Australian classic from the CWA.

Ingredients:
Syrup
1 cup water
850g CSR Golden Syrup
1 tablespoon butter

Dumplings
2 tablespoons butter
1 cup self raising (self rising) flour
1 egg lightly beaten
milk, as needed

Putting it all together:
Place the water, butter, and half the golden syrup in a Dutch oven then slowing bring to a simmer while you make the dumplings.

Rub the butter into the flour.
Stir in the egg and enough milk to create a stiff dough. Add the milk in small additions so the dough doesn't become too sticky.
Roll the dough into portion size of your choice, remembering they expland when they cook.
Please the dough balls, dumplings, into the simmering syrup.
Cover the dumplings with the rest of the Golden Syrup

Cook for 10 to 12 minutes, or until cooked through.
Serve hot with a cream, custard, sweetened soft cheese or custard to balance.

These can also be made in a slow cooker at home. Instead of a Dutch oven, put the Syrup ingredients into a regular sauce pan and bring to a boil. Pour the Syrup into the slow cooker. 

Make the dumpling as instructed and add them to the slow cooker and cook on high for 60-90 minutes.
