120 g butter, softened
200 g brown sugar
3-4 ripe bananas
2 medium eggs
225 g plain flour
1 tsp bi-carb
1 tsp salt
1 tsp vanilla extract
(Optional: Add chopped walnuts)
Putting it all together:
Beat butter and sugar with a mixer.
Mash bananas with a fork (leave some chunks for texture) and add them to the mixer.
Add eggs and beat for about 30 seconds or until well combined.
Sift in flour and bi-carb.
Add salt and vanilla. Mix well.
Pour into a prepared loaf tin.
Cook for about 1 hour at 170 or until a skewer poked in it comes out clean.
Note: If loaf looks to be browning too much, cover with tin foil and continue cooking.

To convert this into a chocolatey treat, throw in 1/4 cup of cocoa powder and half a cup of mini chocolate buds into the mix.
