Pork Scratchings


Ingredients:

  • 1kg pork skin
  • A bunch of salt
Putting it all together:
Trim off any excess fat/meat from the skins we want the skin only, but a little fat won't hurt.

Cut the skin into 10cm strips.

Boil the skin for an hour.

Dehydrate skins for ~12 hours @ 70°c.

Deep fry the skins until they're puffy and lightly golden. 

Drain and empty into a bowl and season to taste.
