- 1kg fresh tomatoes
- 1 onion, large, finely chopped
- 1/4 cup brown sugar
- 1 tbsp salt
- 1/4 cup Dolce Rosso wine (or something light and sweet)
- 1/4 cup cider vinegar
- 1 tsp cinnamon powder
- 1 tsp black pepper, powder
- grated nutmeg to taste
Putting it all together:
Add everything except the nutmeg to a large pot and salt to taste and mix well.
Cook on low heat, stirring often, until the sauce reduces and thickens. Could take an hour or more. Don't allow it to burn.
Once it's ready, you can add nutmeg according to your taste.
Push the contents through a fine sieve to remove skins and seeds and chunks of onion.
Pour into sterilized bottles, then seal tightly and place in the fridge until needed.
