Home made Gin

 

Ingredients:

  • 1.5L 50% ABV spirit
  • 45g Juniper berries
  • 11g coriander seeds
  • 0.9g angelica root
  • 11g lemon peel
  • 40g cucumber
  • 3 peppercorns
Putting it all together:
Add all the ingredients into an air still and heat the spirit gently to 50 C.

Put the lid on, turn off the still and let sit for 2 hours.

Run the still as usual. Ditch 1st 20-30ml and run until distillate lowers to approx 55%.

Proof down to 43% with distilled water and let sit for, at least, 3 days.

Makes approximately 1.4L
