This rich and creamy mushroom sauce is packed with flavour and perfect for serving over steak, chicken, pasta, or baked potatoes. It's sure to become your go-to sauce for any dish.
Ingredients
- 2 tbsp unsalted butter
- ½ tbsp olive oil
- 300g mushrooms, sliced
- Pinch of salt and pepper
- 2 garlic cloves, minced
- ¼ cup white wine
- ½ cup chicken or vegetable broth
- 1 cup heavy/thickened cream
- ½ cup parmesan, finely grated
- 2 tsp fresh thyme leaves (or ¼ - ½ tsp dried thyme)
Method
- Cook the mushrooms:
- Heat olive oil and melt the butter in a skillet over medium-high heat.
- Add the sliced mushrooms and cook leisurely, stirring occasionally, until golden brown, about 4-5 minutes.
- Add garlic:
- Just before the mushrooms are done, add the minced garlic, a pinch of salt, and pepper. Cook for about 1 minute, or until the garlic is golden.
- Deglaze with wine:
- Pour in the white wine, allowing it to sizzle. Stir the mixture, scraping the bottom of the skillet to release any browned bits. Cook for about 1 minute, or until the wine has mostly evaporated.
- Add broth, cream, and parmesan:
- Stir in the broth, cream, and parmesan cheese. Lower the heat to medium and let the sauce simmer gently for 2-3 minutes, stirring occasionally, until it thickens slightly. Avoid boiling the sauce rapidly to prevent the cream from splitting.
- Finish with thyme:
- Stir through the fresh thyme leaves and adjust the seasoning with salt and pepper to taste. Remove from heat.
- Serve:
- This mushroom sauce is perfect over steak, chicken, roast beef, pork, or tossed with pasta. You can also serve it over baked potatoes or use it as a decadent topping for omelettes.
