Brad's Go To Stir Fry Sauce

This was originally the sauce for my Chicken and Cashew Stir Fry, but it's so good I now use it for all of my stir fries. Use this as the base and add whatever other flavours that will go with the main ingredient. 

Ingredients:

  • 3 tbsp soy sauce (ordinary all-purpose or light soy sauce. Not dark soy sauce)
  • 2 tbsp Brandy
  • 3 tbsp oyster sauce
  • 2 tsp sesame oil
  • Dash of white pepper
  • 1 tbsp cornstarch / cornflour
  • 120 ml water

Method

  1. Prepare the sauce:
    1. Combine all the ingredients in a lidded jar and shake vigorously until well mixed.
  2. Add to stir fry:
    1. Once your stir fry ingredients are cooked, pour the sauce over the top.
    2. Continue cooking until the meat is done and the sauce has thickened.

Chef’s Tips:

  • Customise the sauce: Feel free to add ginger, garlic, or chilli to enhance the flavour depending on your stir fry’s ingredients.
  • Thickening: If the sauce doesn’t thicken enough, let it simmer for an additional minute or two.
