Lactose-Free Sweetened Condensed Milk

A perfect substitute for regular condensed milk in desserts and recipes, made using lactose-free milk and sugar. It’s simple to make and can be stored for later use.

Ingredients

  • 1 litre full cream lactose-free milk
  • 380g caster sugar or white sugar

Method

  1. Combine the ingredients:
    • In a medium, heavy-bottom saucepan, combine the lactose-free milk and sugar. Place the saucepan over low heat.
  2. Cook slowly:
    • Cook the mixture over low heat, stirring intermittently, for at least 1 hour. The milk will initially turn a blue-grey color before slowly transforming into a golden brown as it condenses.
  3. Monitor the heat:
    • If the milk starts to burn or bubble too wildly, lower the heat. The key is to cook it slowly and steadily to avoid scorching.
  4. Check the consistency:
    • The condensed milk is ready when it coats the back of a spoon and has thickened slightly. It will be thinner than regular condensed milk while warm but will thicken as it cools.
  5. Store:
    • Once cooled, transfer the condensed milk to an airtight container and store it in the refrigerator.
