A perfect substitute for regular condensed milk in desserts and recipes, made using lactose-free milk and sugar. It’s simple to make and can be stored for later use.
Ingredients
- 1 litre full cream lactose-free milk
- 380g caster sugar or white sugar
Method
- Combine the ingredients:
- In a medium, heavy-bottom saucepan, combine the lactose-free milk and sugar. Place the saucepan over low heat.
- Cook slowly:
- Cook the mixture over low heat, stirring intermittently, for at least 1 hour. The milk will initially turn a blue-grey color before slowly transforming into a golden brown as it condenses.
- Monitor the heat:
- If the milk starts to burn or bubble too wildly, lower the heat. The key is to cook it slowly and steadily to avoid scorching.
- Check the consistency:
- The condensed milk is ready when it coats the back of a spoon and has thickened slightly. It will be thinner than regular condensed milk while warm but will thicken as it cools.
- Store:
- Once cooled, transfer the condensed milk to an airtight container and store it in the refrigerator.
Chef’s Tips:
- Avoid high heat: Cooking over low heat is crucial to prevent burning and ensure smooth, rich condensed milk.
- Use in recipes: This lactose-free sweetened condensed milk is perfect for desserts like fudge, pies, or as a coffee sweetener.
