Ingredients
- 500g cubed beef
- 2 potatoes, peeled and cubed
- 2 carrots, peeled and sliced
- 1 onion, chopped
- 1 can (400g) tinned tomatoes
- 2 cups beef stock (or water with beef bouillon)
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 cloves garlic, minced (optional)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- 2 tbsp oil (vegetable or olive oil)
Method
- Prepare the ingredients:
- Cube the beef, peel and cube the potatoes, slice the carrots, and chop the onion.
- Brown the beef:
- Heat 2 tablespoons of oil in a large pot or Dutch oven over medium-high heat.
- Add the cubed beef and cook until browned on all sides. Remove the beef from the pot and set it aside.
- Sauté the vegetables:
- In the same pot, add more oil if needed, and sauté the onions and garlic (if using) until they become translucent, about 3-4 minutes.
- Add the carrots and potatoes, cooking for another 3-4 minutes.
- Build the stew:
- Return the browned beef to the pot. Add the tinned tomatoes, beef stock, Worcestershire sauce, soy sauce, and oyster sauce. Stir well to combine.
- Stir in the thyme, rosemary, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let the stew simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally, adding more water or stock if necessary.
- Final seasoning:
- Taste the stew and adjust the seasoning with salt and pepper if needed. Serve hot and enjoy!

- Thickening the stew: If you prefer a thicker stew, remove the lid for the last 30 minutes of cooking to let some of the liquid evaporate.
