Hearty Beef Stew

Ingredients

  • 500g cubed beef
  • 2 potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 onion, chopped
  • 1 can (400g) tinned tomatoes
  • 2 cups beef stock (or water with beef bouillon)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 cloves garlic, minced (optional)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tbsp oil (vegetable or olive oil)

Method

  1. Prepare the ingredients:
    • Cube the beef, peel and cube the potatoes, slice the carrots, and chop the onion.
  2. Brown the beef:
    • Heat 2 tablespoons of oil in a large pot or Dutch oven over medium-high heat.
    • Add the cubed beef and cook until browned on all sides. Remove the beef from the pot and set it aside.
  3. Sauté the vegetables:
    • In the same pot, add more oil if needed, and sauté the onions and garlic (if using) until they become translucent, about 3-4 minutes.
    • Add the carrots and potatoes, cooking for another 3-4 minutes.
  4. Build the stew:
    • Return the browned beef to the pot. Add the tinned tomatoes, beef stock, Worcestershire sauce, soy sauce, and oyster sauce. Stir well to combine.
    • Stir in the thyme, rosemary, bay leaf, salt, and pepper.
    Simmer the stew:
    • Bring the mixture to a boil, then reduce the heat to low. Cover and let the stew simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally, adding more water or stock if necessary.
  5. Final seasoning:
    • Taste the stew and adjust the seasoning with salt and pepper if needed. Serve hot and enjoy!

  • Thickening the stew: If you prefer a thicker stew, remove the lid for the last 30 minutes of cooking to let some of the liquid evaporate.
