Lamb Chops with Rosemary and Garlic

These forequarter chops are tender, flavorful, and infused with fresh herbs. The simple marinade of rosemary, garlic, and lemon juice enhances the natural flavours of the lamb, while broiling at the end creates a delicious crust.

Ingredients

  • 4 lamb forequarter chops
  • 2 tablespoons fresh rosemary, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon fresh lemon juice

Method

  1. Preheat the oven:
    1. Preheat your oven to 190°C (375°F).
  2. Prepare the marinade:
    1. In a bowl, combine the minced garlic, chopped rosemary, olive oil, salt, pepper, and a splash of lemon juice. Mix well.
  3. Season the lamb:
    1. Rub the rosemary and garlic mixture evenly over both sides of the lamb chops.
  4. Bake the lamb:
    1. Place the seasoned lamb chops in a baking dish and cover with foil. Bake for 25-30 minutes.
  5. Grill for a crust:
    1. After baking, remove the foil and switch to the broil setting. Broil for an additional 5 minutes to develop a nice crust on the chops.
  6. Serve:
    1. Let the lamb rest for a few minutes before serving to retain its juices. Enjoy with your favourite side dish.
