Passion Fruit Bellini

A fruity, tropical twist on the classic Bellini, with a sweet passion fruit syrup base and a splash of sparkling wine. This refreshing cocktail is perfect for brunch or any celebratory occasion.

Ingredients

  • 1½ oz passion fruit simple syrup
  • ½ oz peach schnapps (optional)
  • 2 oz Brut sparkling wine, chilled
  • Passion fruit seeds for garnish (optional)

Method

  1. Prepare the flute:
    • In a cocktail flute, combine the passion fruit simple syrup and peach schnapps (if using).
  2. Add the sparkling wine:
    • Slowly pour the chilled Brut sparkling wine into the flute to mix with the syrup.
  3. Garnish and serve:
    • Garnish with 5 or 6 passion fruit seeds from either the passion fruit simple syrup or fresh passion fruit, if desired. Serve immediately and enjoy!

  • Peach schnapps: The schnapps is optional but adds an extra layer of fruitiness to complement the passion fruit.
  • Simple syrup: You can make passion fruit simple syrup by combining equal parts passion fruit juice and sugar, then heating until the sugar dissolves.
