A fruity, tropical twist on the classic Bellini, with a sweet passion fruit syrup base and a splash of sparkling wine. This refreshing cocktail is perfect for brunch or any celebratory occasion.
Ingredients
- 1½ oz passion fruit simple syrup
- ½ oz peach schnapps (optional)
- 2 oz Brut sparkling wine, chilled
- Passion fruit seeds for garnish (optional)
Method
- Prepare the flute:
- In a cocktail flute, combine the passion fruit simple syrup and peach schnapps (if using).
- Add the sparkling wine:
- Slowly pour the chilled Brut sparkling wine into the flute to mix with the syrup.
- Garnish and serve:
- Garnish with 5 or 6 passion fruit seeds from either the passion fruit simple syrup or fresh passion fruit, if desired. Serve immediately and enjoy!

- Peach schnapps: The schnapps is optional but adds an extra layer of fruitiness to complement the passion fruit.
