Grilled Chicken with Avocado Salsa

This grilled chicken is seasoned with a smoky spice rub and topped with a refreshing avocado salsa, making it a perfect balance of rich and fresh flavours. The addition of crispy bacon takes it to the next level.

Ingredients

Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 rashers of crispy bacon
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • Salt and pepper, to taste

Avocado Salsa:

  • 1 ripe avocado, diced
  • 1 small tomato, diced
  • ¼ cup red onion, finely chopped
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh coriander (cilantro), chopped
  • Salt and pepper, to taste

Method

  1. Prepare the Chicken:

    • Preheat your grill or grill pan to medium-high heat.
    • In a small bowl, mix together the olive oil, paprika, garlic powder, cumin, salt, and pepper.
    • Rub this spice mixture evenly over the chicken breasts, ensuring they are well coated.
  2. Grill the Chicken:

    • Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 75°C (165°F) and the chicken is fully cooked through.
    • Cook the bacon alongside the chicken until crispy.
    • Once done, remove the chicken from the grill and let it rest for a few minutes.
  3. Prepare the Avocado Salsa:

    • While the chicken and bacon are cooking, combine the diced avocado, tomato, red onion, lime juice, and chopped coriander in a bowl.
    • Season with salt and pepper to taste.
    • Gently toss the salsa ingredients together to combine.
  4. Serve:

    • Slice the grilled chicken and serve it topped with the fresh avocado salsa.
    • Crumble the crispy bacon over the top for added crunch and flavour.
