This grilled chicken is seasoned with a smoky spice rub and topped with a refreshing avocado salsa, making it a perfect balance of rich and fresh flavours. The addition of crispy bacon takes it to the next level.
Ingredients
Chicken:
- 2 boneless, skinless chicken breasts
- 2 rashers of crispy bacon
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp ground cumin
- Salt and pepper, to taste
Avocado Salsa:
- 1 ripe avocado, diced
- 1 small tomato, diced
- ¼ cup red onion, finely chopped
- 1 tbsp fresh lime juice
- 2 tbsp fresh coriander (cilantro), chopped
- Salt and pepper, to taste
Method
Prepare the Chicken:
- Preheat your grill or grill pan to medium-high heat.
- In a small bowl, mix together the olive oil, paprika, garlic powder, cumin, salt, and pepper.
- Rub this spice mixture evenly over the chicken breasts, ensuring they are well coated.
Grill the Chicken:
- Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 75°C (165°F) and the chicken is fully cooked through.
- Cook the bacon alongside the chicken until crispy.
- Once done, remove the chicken from the grill and let it rest for a few minutes.
Prepare the Avocado Salsa:
- While the chicken and bacon are cooking, combine the diced avocado, tomato, red onion, lime juice, and chopped coriander in a bowl.
- Season with salt and pepper to taste.
- Gently toss the salsa ingredients together to combine.
Serve:
- Slice the grilled chicken and serve it topped with the fresh avocado salsa.
- Crumble the crispy bacon over the top for added crunch and flavour.
