Gingernut biscuits

These classic biscuits are crisp, warmly spiced with ginger and cinnamon, and perfect for dunking in your tea. Their delightful snap and rich flavour make them a must-try for biscuit lovers.

Ingredients

  • 200g butter, chopped
  • 1 cup brown sugar
  • ½ cup golden syrup
  • 3 cups plain flour
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp bicarbonate of soda

Method

  1. Prepare the oven:
    • Preheat your oven to 180°C and line 2 baking trays with baking paper.
  2. Make the biscuit dough:
    • In a small saucepan, combine butter, brown sugar, and golden syrup. Stir over low heat until the mixture melts and is well combined.
    • Transfer the melted mixture to a large bowl.
    • Using an electric mixer, beat the mixture until it turns light and fluffy. Allow it to cool slightly.
    • Sift together the flour, ground ginger, ground cinnamon, and bicarbonate of soda. Gently fold the dry ingredients into the butter mixture until fully combined.
  3. Shape the biscuits:
    • Roll tablespoonfuls of the mixture into balls and place them on the prepared trays, leaving a little space between each biscuit.
    • Flatten each ball slightly with a fork.
  4. Bake:
    • Bake for 12-15 minutes, or until golden brown.
    • Remove from the oven and transfer the biscuits to a wire rack to cool completely.
