These classic biscuits are crisp, warmly spiced with ginger and cinnamon, and perfect for dunking in your tea. Their delightful snap and rich flavour make them a must-try for biscuit lovers.
Ingredients
- 200g butter, chopped
- 1 cup brown sugar
- ½ cup golden syrup
- 3 cups plain flour
- 1 tbsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp bicarbonate of soda
Method
- Prepare the oven:
- Preheat your oven to 180°C and line 2 baking trays with baking paper.
- Make the biscuit dough:
- In a small saucepan, combine butter, brown sugar, and golden syrup. Stir over low heat until the mixture melts and is well combined.
- Transfer the melted mixture to a large bowl.
- Using an electric mixer, beat the mixture until it turns light and fluffy. Allow it to cool slightly.
- Sift together the flour, ground ginger, ground cinnamon, and bicarbonate of soda. Gently fold the dry ingredients into the butter mixture until fully combined.
- Shape the biscuits:
- Roll tablespoonfuls of the mixture into balls and place them on the prepared trays, leaving a little space between each biscuit.
- Flatten each ball slightly with a fork.
- Bake:
- Bake for 12-15 minutes, or until golden brown.
- Remove from the oven and transfer the biscuits to a wire rack to cool completely.
